Creamy Broccoli Cheddar Soup
When you need dinner in a hurry, a quick soup is can be easily prepared and ready fast. When I started making Broccoli Cheddar Soup, I was surprised you can have this hearty and filling soup ready in about 20 minutes. It’s also easy to keep all the ingredients you need available for when you need a fast dinner.
Soups make a great dinner alone or with a side salad or with your favorite half sandwich. This Cheddar Broccoli soup is creamy and filling as a stand-alone dinner (and it makes great leftovers too).

- 1 head Broccoli, chopped
- 1 medium Onion, chopped
- 1 medium Carrot, sliced
- 2-3 cups Chicken broth
- 3 cups Whole milk or half and half
- 4 tbsp Butter
- 1 cup Mild cheddar cheese
- dash Salt & pepper to taste

Place the chopped broccoli, carrots and onions in a 6-quart pot. Add the chicken broth and bring to a simmer. Allow ingredients to simmer about 10 minutes until the broccoli and carrots are tender.

Gradually add the milk and butter. Stir occasionally while the butter melts. Be careful not to let the milk burn.

Next, add the cheddar cheese and stir until completely blended and cheese is melted. Salt and pepper to taste. Cook on low for about 5 minutes.

Serve in soup bowls. Sprinkle a little extra cheese on top to garnish. Enjoy!
