Homemade Potato Salad is a classic recipe for picnics, potlucks, BBQ’s and easy to make for any occasion. Every mom needs a go-to homemade potato salad recipe. Here’s how to make homemade potato salad that’s simple and everyone will love.
Whenever I go to a picnic or have a simple BBQ at home, homemade potato salad is always one of my favorite sides. A creamy potato salad goes great with hamburgers, hot dogs, steaks, chicken or anything you cook on a grill. It pairs well with BBQ Baked Beans and corn on the cob.
Don’t buy potato salad at the grocery store and start making your own. It tastes so much better homemade. You can add your own variations. For example, you can add more egg if you like. You could also try adding chopped celery or red bell peppers.
A quick and easy Homemade Potato Salad Recipe
- 3 pounds potatoes.
- 3 hard boiled eggs chopped
- 1 onion chopped
- 1 small red pepper chopped
- 2 tsp. fresh dill chopped
- 2 tbsp. pickle relish dill or sweet - your choice
- 1/4 tsp. ground black pepper
- 1/2 tsp. salt
- 1 cup mayonnaise
- 3/4 cup sour cream
- 1 tbsp mustard optional

Wash potatoes and cut into 1 inch cubes. If you prefer, you can peel them as well.

In a saucepan over medium heat, add potatoes and cover with water. Bring them to a boil then reduce the heat and continue cooking until they are tender but not falling apart (about 10-15 minutes). Drain well and set aside to cool.

Once cooled, using the same pot, add the onion, red pepper, eggs, and fresh dill.

In a separate bowl, mix together the mayonnaise, mustard and sour cream. Add the pickle relish, salt and pepper and mix. Fold this sauce into the potatoes until everything is well coated.
