Welcome to the Smart Mom Weekly Menu Plan for the week of May 7th. Each week on Monday morning, I share a simple menu plan for the week with breakfast and dinner ideas for your family. Some weeks might have a theme and other times they will just be simple to make recipes for busy moms.
The dinners this week are a mixture of casseroles and crockpot recipes. Casseroles and crockpot recipes are great for busy moms. You can prep the meal ahead of time and let it cook all day in the crockpot or for 30-45 minutes in the oven while you finish homework or make school lunches for tomorrow. It’s also easy to clean up (usually just one pot).
The breakfasts this week include oatmeal, toast, and even simple nutrigrain bars. I added a few special breakfast ideas on the weekend when you probably have more time to cook breakfast. On busy mornings, just keep breakfast easy.

Monday
Breakfast – Let’s start the week off easy with a favorite breakfast cereal you have at home and milk.
Dinner – Here’s a unique dinner idea – Ground Turkey Mexican Lasagna
Tuesday
Breakfast – Instant Oatmeal or Strawberry Honey Overnight Oats
Dinner – Crockpot BBQ Pork Ribs and steamed broccoli
Wednesday
Breakfast – What a fun make your own breakfast idea – No Bake Fruit Pizzas
Dinner – An interesting twist on the cabbage roll – Lazy Cabbage Roll Casserole
Thursday
Breakfast – Quaker Breakfast Squares or Nutrigrain Breakfast bars
Dinner – Here’s a simple favorite – Easy Tator Tot Casserole
Friday
Breakfast – Paddington Bear Toast – these are so cute!
Dinner – Pizza night (homemade or ordered your choice). Try this homemade pizza – Gluten-free Pizza Bites
Saturday
Breakfast – A special Saturday morning breakfast – Maple Cream Cheese French Toast
Dinner – Make it simple with crockpot recipe today – Slow Cooker Creamy Mushroom & Rice Soup
Sunday
Breakfast – Almond croissants with strawberries and Nutella (this will be a favorite breakfast for sure).
Dinner – Clean out the Fridge – make a buffet of all the leftovers and empty the fridge.
