Broccoli Cheddar soup
Creamy Broccoli Cheddar Soup

A creamy cheesy soup filled with broccoli that's quick and easy to make.

Course: Main Course, Soup
  • 1 head Broccoli, chopped
  • 1 medium Onion, chopped
  • 1 medium Carrot, sliced
  • 2-3 cups Chicken broth
  • 3 cups Whole milk or half and half
  • 4 tbsp Butter
  • 1 cup Mild cheddar cheese
  • dash Salt & pepper to taste
  1. Place the chopped broccoli, carrots and onions in a 6-quart pot. Add the chicken broth and bring to a simmer. Allow ingredients to simmer about 10 minutes until the broccoli and carrots are tender.

  2. Gradually add the milk and butter.  Stir occasionally while the butter melts. Be careful not to let the milk burn.

  3. Next, add the cheddar cheese and stir until completely blended and cheese is melted.  Salt and pepper to taste.  Cook on low for about 5 minutes.

  4. Serve in soup bowls. Sprinkle a little extra cheese on top to garnish.  Enjoy!
