Welcome to the Smart Mom Weekly Menu Plan for the week of May 14th.  Each week on Monday morning, I share a simple menu plan for the week with breakfast and dinner ideas for your family.  I try to find and share recipes that are quick and easy to make for busy moms.

This week I have a variety of different meal ideas for dinner. I added a few “bar” ideas that allow everyone to pick and choose their favorite items.

The breakfasts this week include a few simple ideas like toast and breakfast bars.  I added a few easy breakfast ideas likes energy bites and oatmeal breakfast cookies. These are all great ideas because you can make a big batch and save them in the freezer for another day.

Menu Plan for the week of May 14, 2018

Monday

Breakfast – Toast and scrambled eggs.

Dinner – Here’s a low carb and easy one-pan dinner (my favorite kind because they are so easy to clean up) – Super Easy Sheet Pan Chicken.

Tuesday

Breakfast – Energy breakfast bites (these are great recipes to make ahead and save in the freezer too).

Dinner – Taco Tuesday! Make your own Taco Bar with your favorite toppings. Here’s a recipe for homemade seasoned Taco Meat.

Wednesday

Breakfast – Easy breakfast bars or strawberry cereal bars.

Dinner – Sandwich bar.  Get out the bread, your favorite sandwich meats, tuna salad or egg salad, and some lettuce and with your favorite condiments and everyone can have their favorite sandwich.

Thursday

Breakfast – My kids always want cookies for breakfast. Try this healthy version – 4 Ingredient Blueberry Cookies.

Dinner – We didn’t have this dinner when I was growing up, but it’s one of my new favorites – Easy Chili Mac and Cheese.  It’s easy to make and I usually have all the ingredients on hand.

Friday

Breakfast – Easy French Toast Bites – you can make these quickly and let them bake while you are getting ready in the morning.

Dinner – Pizza night (homemade or ordered your choice). Try this homemade calzone – Mini Bacon Cheeseburger Calzone.

Saturday

Breakfast – How about something different on the weekend with a Waffle Sundae Bar. A great breakfast idea and a fun way to start the weekend (it’s also an easy breakfast idea for slumber parties).

Dinner – Stuffed Chicken with Bacon, Basil and Goat Cheese and a side of steamed cauliflower. This easy chicken recipe your family will enjoy (and you can always use your favorite cheese if you don’t like goat cheese).

Sunday

Breakfast – Ham and Egg Cheese Puffs

Dinner – Clean out the Fridge – make a buffet of all the leftovers and empty the fridge.
