You can easily make a complete meal with this loaded potato grilled cheese sandwich recipe just add a cup of soup or a simple salad. Make dinner even easier give the kids a few chips and grapes or apple slices on the side for a complete meal.

- 1 Potato
- Vegetable Oil
- Pepper
- Onion Powder
- Garlic Powder
- Salt
- Parsley
- 2 slices of Bread
- 3 slices of Cheddar Cheese
- Chives
- 3 slices of Cooked Bacon
- Nonstick Cooking Spray
- Sour Cream for dipping

Start by cleaning and slicing your potato into roughly 1/4 inch slices.

Fill the bottom of your skillet with oil, about 1/2 inch deep, and heat up.

Throw in your potato slices, and dash each slice with pepper, onion powder, garlic powder, salt, and parsley.

Let them cook for about 2 -3 minutes (until golden) and flip.

Repeat steps 3 and 4 with the opposite side of potatoes.

Once both sides of potatoes are golden brown, place them on a plate.

Now it is time to build your grilled cheese. Place a slice of bread down, your cheddar cheese, potatoes, sprinkle with chives, add bacon, and finally your other slice of bread.

Clean your skillet and spray with non-stick cooking spray.

Grill your sandwich on each side until golden brown, as shown.
