Sweet Potato Casserole is a Thanksgiving menu classic. It pairs well with turkey, stuffing, and green bean casserole. Because it has a sweet taste, and when you garnish it with marshmallows kids love it too.
Classic Sweet Potato Casserole - a Thanksgiving favorite
- 1/2 cup butter melted
- 2 cans Bruce's Yams in Syrup Drained
- 1/2 cup sugar
- 1 egg
- 1 tsp pure vanilla
- 1 tsp cinnamon
- 1 cup oatmeal
- 1/2 cup brown sugar
- 1/2 cup butter
- 1/2 cup pecans
- 1 1/2 cups marshmallows
Pour the yams/sweet potatoes (drained) into a large mixing bowl. Smash the sweet potatoes until they are creamy.
Add the sugar, egg, butter, vanilla, cinnamon to the sweet potatoes. Mix all the ingredients together well.
Spread evenly across a 13X9 pan. Set aside.
Mix the topping ingredients together except for the marshmallows. Add the butter, brown sugar, oatmeal and pecans to a small mixing bowl and mix until crumbly. If needed, add more oatmeal to make it crumbly.
Sprinkle the topping evenly over the sweet potato mixture.
Bake for 30 minutes at 350 degrees until bubbly on the sides. Add the marshmallows to the top and bake for 5 minutes/until melted.
Allow to cool for 10-15 minutes serve warm.
