Smart Mom Menu Plan ~ May 28, 2018
Welcome to the Smart Mom Weekly Menu Plan for the week of May 28th. Here is this week’s simple menu plan filled with kid-friendly recipes for breakfast and dinner that your family will love.
Since we are getting into the hot summer days, let’s try to cook less (turning on the stove and oven can make the whole house get so hot during the summer). For breakfast this week, I am focusing on quick, no-bake breakfast recipes you can prepare the night before like overnight oats and energy balls. For dinner, I have several delicious dinner salads that are crisp and refreshing.

Monday
Breakfast – Cereal and milk (pick your favorite)
Lunch or Dinner – Memorial Day Cookout – cook your favorite hamburgers, hot dogs, steaks or chicken on the grill today. Don’t forget the homemade potato salad, baked beans, and corn on the cobb.
We will be going to my parent’s house for a cookout (if it doesn’t rain). Hope you enjoy your Memorial Day and remember the sacrifice of so many so that we enjoy our freedom today.
Tuesday
Breakfast – Easy Breakfast Energy Balls
Dinner – A Cobb Salad is always one of my favorites. Here’s a low-carb layered Cobb Salad perfect for summer evenings.
Wednesday
Breakfast – Wild Berry Banana Smoothie – a tasty start to your morning
Dinner – Here’s a healthy twist on a classic favorite – A Big Mac Salad
Thursday
Breakfast – Love this idea – Breakfast popsicles. Make them the night before and they will be ready in the morning. Great idea to get your kids to eat a healthy breakfast – Blackberry Banana Oat Breakfast Popsicles
Dinner – Kids love Chicken tenders. Make them healthy with your airfryer (or you could make them in the oven too). Try this Airfryer Chicken Tender Recipe and add a side salad or quick steamed veggie for an easy dinner.
If you don’t have an Airfryer yet, here’s my recommendation for an inexpensive starter Airfryer.
